As I have told you numerous times, my sweet little Cohen actually screams for fries every time we pass by the golden arches. Funny thing is, I rarely ever have taken him there. So I can thank Mom for that. In fact, the other day we went by Subway and he was very confused when his sandwich didn’t come with fries. “Fries?” he asked. “No baby, they don’t have fries here”- I seriously wish I had a picture of his confused/worried/concerned expression when he heard that news!
I know a lot of people don’t think they like sweet potatoes- because you haven’t tried them since someone tried to feed them to you with marshmallows- but its high time to give this wonderful veggie another chance. I figured adding a little parmesan to the equation might help you warm up to the idea!
Parmesan-Pepper Sweet Potato Fries (the ones Co loves MORE than McDonald’s- I swear)
Servings: 1
Calories: 249
Protein: 5 grams
Fiber: 7 grams
Ingredients:
1/2 lb sweet potatoes, cut into 1/4″ thick sticks
1 tbsp grated reduced fat Parmesan cheese
1/2 tsp extra virgin olive oil
1/8 tsp garlic powder
1/8 tsp paprika
pinch of cayenne pepper
salt, to taste
pinch of ground black pepper
Preheat oven to 400 degrees.
In a medium bowl, toss the potato, cheese, olive oil, garlic powder, paprika, salt cayenne, and black pepper.
Place the potato sticks in a single layer on a medium non-stick baking sheet. Bake for 8 minutes. Flip the potatoes and bake another 10-12 minutes, until tender and browned in spots. Serve immediately.

I just ran across your blog after finally putting all the blogs I read into google reader and they suggested I read “accidental traveler”…
I am SO glad that you have started this. Life is mess (our pastor says it all the time) and though my blog doesn’t specifically reach the far stretches of my depths, I do appreciate those that DO share those! I met you in Joplin…probably 5 years ago at the skate park/youth center that promoted Invisible Children and just saw a spark that undoubtedly came from Jesus in your eye. Thank you for deciding to use this platform and being SO vulnerable and transparent. There are things happening around me (to others) that your blog hits on and it is refreshing to see hope and a point of view that has chosen to stand in the gap when others can’t see how.
Thank you also for the recipes…turns out you have posted the last few Tuesdays of things that even as an adult I just can’t manage to swallow.
